Chef Gavin Swalwell trained in Melbourne, he is classically French trained and has worked at a number of well regarded restaurants including Le Restaurant, Burnham Beeches, Delgany and Sails on the Bay after which he relocated to Rutherglen in North East Victoria where he and his partner Fi created two much loved restaurants and a brewery before moving to the Far South Coast in June 2021 after spending many years holidaying here previously.
Their vision was to create a new life on the far south coast where they had been amazed by not just the friendly caring people but also blown away by the beauty and majesty of the area and the bounty of amazing and varied produce that it yields. So they have opened Tidal to showcase this to all.
